Not only do they save time, but they’re also an easy way to get a protein-packed meal without much effort.
Even better? These recipes are perfect for using up leftover breakfast meat. Have extra bacon from Sunday breakfast? A few sausage links no one finished? Dice them up and turn them into breakfasts you’ll actually be excited to eat all week.
Why Add Cottage Cheese?
If you’ve never added cottage cheese to eggs before, you’re in for a surprise. Once blended, it completely disappears into the eggs while making them incredibly creamy and fluffy.
It also adds a significant protein boost without changing the flavor.

Easy High-Protein Egg Bites

I highly recommend the silicone muffin pans to make getting these egg bites out even easier!
Ingredients
- 10 eggs
- 1 cup blended cottage cheese
- 1 cup shredded cheddar cheese
- 1 cup diced cooked bacon or sausage
- ½ cup diced peppers
- ¼ cup diced onions (optional)
- Salt, pepper, garlic powder, and paprika
- Tip: place a pan with water on a lower shelf in the oven to keep the egg bites moist
Directions
- Preheat oven to 300°F.
- Blend the cottage cheese until smooth.
- Whisk together eggs and cottage cheese.
- Stir in remaining ingredients.
- Grease a silicone muffin pan.
- Fill each cup about ¾ full.
- Bake for 25–30 minutes until just set.
Allow to cool completely before freezing.
Freezing Instructions
Freeze on a baking sheet first, then transfer to a freezer bag.
Reheating
- Microwave 45–60 seconds from refrigerated.
- About 1½–2 minutes from frozen.
Freezer Breakfast Burritos
Breakfast burritos are incredibly customizable and are one of the easiest freezer meals to keep stocked.
The Easy Egg Bake Method
Instead of standing over the stove making scrambled eggs, bake everything together in one pan.
Egg Bake Ingredients
- 12 eggs
- 1 cup blended cottage cheese
- Salt and pepper
- Garlic powder
- 1–2 cups shredded cheese
- 1–2 cups cooked bacon or sausage
- Optional diced peppers, spinach, onions, or hash browns
Bake
- Preheat oven to 350°F.
- Grease a 9×13 baking dish.
- Mix everything together.
- Bake for 25–30 minutes until set.
- Let cool slightly before cutting into squares.
Now simply cut the egg bake into portions instead of scooping scrambled eggs into every tortilla. It makes assembly much faster and keeps everything together better.
Build Your Burritos

For each burrito:
- 1 Carb Balance tortilla
- One square of egg bake
- Extra shredded cheese
- Salsa (optional)
- Avocado after reheating

Roll tightly by folding in the sides first, then rolling from the bottom.
Freeze Like a Pro
Wrap each burrito individually in parchment paper or foil before placing them into a large freezer bag.
Label with the date, and they’ll stay fresh for up to 3 months.
Reheating
From frozen:
- Microwave for 2–3 minutes, flipping halfway through.
- Or thaw overnight and crisp in a skillet for a delicious golden tortilla.
Mix & Match Filling Ideas
Don’t be afraid to customize your batch with whatever you have in the refrigerator.
Try adding:
- Spinach
- Bell peppers
- Mushrooms
- Green onions
- Jalapeños
- Pepper jack cheese
- Hash browns
- Black beans
- Turkey sausage
- Ham
These are also a great way to clean out the refrigerator before grocery shopping.
My Favorite Meal Prep Tip
Whenever I cook bacon or sausage for breakfast, I intentionally make extra. Instead of wondering what to do with the leftovers, I already know they’ll become egg bites or breakfast burritos later in the week.
