There is something about preparing for a new baby that makes you look at your freezer in a completely different way. Suddenly, the idea of having dinner already made feels less like a convenience and more like a gift to your future self.
When you’re pregnant, tired, and still trying to keep up with a toddler’s needs, cooking every night can feel impossible. Between daycare pickups, toddler meltdowns, bedtime routines, and the endless cycle of dishes, the last thing you want to worry about during those early newborn days is figuring out what’s for dinner.
My goal with freezer meals wasn’t to create complicated recipes or fill my freezer with things that still required a lot of work later. I wanted meals that could go straight from freezer to oven (or only needed minimal finishing touches), were filling for the whole family, and were meals my toddler would actually eat.

This one might be my favorite because it gives you all the flavors of stuffed peppers without all the work.
Instead of stuffing individual peppers, everything gets cooked together into an easy casserole-style meal. It’s simple, filling, and reheats incredibly well.

- Easy for toddlers to eat
- Freezes and reheats well
- Uses simple pantry ingredients
I make mine with:
- Ground beef or turkey
- Rice
- Bell peppers
- Diced Tomato’s
- Fajita seasoning

It’s the kind of meal that feels homemade without requiring a lot of energy — which is exactly what you need when you’re balancing pregnancy, a toddler, and preparing for a newborn.
Tips for Freezer Meal Success Before Baby Arrives
A few things I learned while preparing meals ahead:
Label everything.
Write the meal name, date, and cooking instructions directly on the container. Newborn sleep deprivation is not the time to guess what’s hiding in the freezer.
Use disposable pans when it makes sense.
Having fewer dishes during those first weeks is worth it.
